These fajitas were so delicious we now make them for weeknight dinners at home! No one in my home is a vegetarian. My kids don’t like too much heat, so I substitute green peppers for the fresh chiles and ancho chile powder for regular; the latter gives a nice smoky flavour without too much heat.

These were a total hit yesterday! I marinated the sweet potato ‘steaks’ the day before and pickled the red onion in lime juice at our camp site. The omnivores and vegans alike loved them topped with chickpeas, potato salad and whatever else was on the table. Thank you so much, they were so much fun and super tasty I will make this a go-to recipe for sure!????

Truly an awesome, easy recipe! It’s so good I make it at home (and not just when camping). Who knew fajita seasoning could be as easy as chile powder, cumin & salt!
