I thought the same thing so I added some Coke soda and Apple Juice to cut the salt. Taste tested as I added them before I marinated the beef! Now I have to wait and see how it comes out!1 star

We use light brown. Through, really either would work if you want to play around with the flavor!

Curing salt is not required–though it would help extend the shelf life of the jerky without refrigeration.

So glad you enjoyed it! We don’t find that storing it in the fridge noticeable changes anything, but the freezer can change the flavor depending on how long it’s in there.

I have a Farberware double door oven with lots of features, including a dehydrator. I set the temp at 200° for 4 hours, which was perfect! I had cut thin slices and placed them in the basket, salt and peppered them, and dehydrated them. I had a taste of one piece, awesome and tender, which means I cut against the grain. I bought a portable type of handheld vacuum sealer with zipper bags that have a suction seal. Works great! My jerky is now in the freezer ready to bug out!

We made two batches of 5lbs of meat in each batch (adjusted recipe measurements accordingly). The result was two very full 1 gallon ziploc bags of delicious jerky. The marinade to meat ratio was perfect which meant cleaning our dehydrator was simple. While we will experiment with a few additional ingredients, this will be our go to recipe.
