We made this at home last night in a cast iron skillet, with seitan chorizo. Used shallots because we didn’t have green onions. Finished the eggs by tossing the skillet in the oven. So good, quick and easy. This will be a new go-to whether camping or at home.5 stars

SO GOOD. We added a green sauce I made ahead of time (cilantro, lime, olive oil, salt, and garlic). The colors and flavors were perfect. Who knew maple syrup and green sauce go together?!5 stars
